Cheese with Black Pepper
This cheese is named after "La nona" which is a tiny old miner village nearby the dairy. In one of the old house some locals found an old manuscript, which dates back in the 1753, with a recipe for a cheese with black pepper. it is quite curious the use of black pepper in a remote town like this in the 18th century, but probably at the time the area was a transit for commerce between the Republic of Venice and the rest of Europe.
This cheese is made with skimmed cow's milk, with black pepper grains inside and grind pepper on the outside.

Ingredients: Milk, Salt, Rennet.
