This is a classic Alpage cheese made with milk coming from the high pastures (from 1200 mt to 2300 mt asl) of the allotted villages of the Alta Val Brembana. Infact In Bergamasque dialect , "Formai de Mut" means mountain cheese.

The production is strictly regulated from the Consorzio. It must be produced from raw, full fat cow's milk and the cows must be fed with grass originating from area selected by the Consorzio. 

With stronger flavors in the summer version, it has a more delicate taste during the winter production.

For fresh products like cheese and cured meats the order will be shipped from the location of the supplier on Monday and Tuesday. Cheese will be vacuum sealed and put in an isothermal bag with dry ice in it to preserve the freshness. 

Orders for fresh products will have a weekly cut off on Tuesday at 12 CET.

It's like having a dinner in Lombardy

I ordered three kind of cheese from their Valtorta producer. First of all, the shipping (DHL Express) was brilliant, it arrived in two days from the order. All the items were very well packaged with each piece of cheese being vacuum sealed individually and dry ice in the box.
Tastewise, their Formai de Mut was really delicious. Its smell and taste brought me to memories of mountain chalet in Lombardy. I used as a topping for polenta and pizzoccheri and the result was excellent.
For sure, I am going to order from them again!

Amazing cheese!

I have ordered this cheese and the stracchino. I didn't know Formai de Mut and I was suprised on how good it was. More complex flavour than stracchino. Amazing.
