Originally Parmesan cheese was made only with Red Cows' Milk. Its higher quality due to a better concentration of Casein was the perfect choice to make this cheese that had to be aged up to two years or more.
With the industrialisation and the soaring worldwide demand of Parmesan the red cow was replaced with the more productive Frisona which can make up to two third of milk than the red cow.
The Parmesan we know nowadays is surely a great product, but if you want to taste the real Parmigiano that was produced before the mass production you should really try this gem.
