STRACCHINO DI MONTAGNA
The word "stracchino" comes from the word "Stracc", which in Lombardy dialect means tired. In the old days Stracchino was a cheese made from Milk coming from the Cows that ended the long migration from the mountains pastures to the winter Stables. As a consequence cows were tired and used to produce few liters of milk which was used to make a ready made cheese for the shepherd.
Nowadays a lot has changed and the long migrations are a thing of the past, but Alain and his team are still very proud of this product. With milk coming from a selected cattle few KM from the Dairy it is a true expression of Valsassina.
Ingredients: Milk, Salt, Rennet.
