This Italian blue cheese is Alain version of Gorgonzola piccante.
Named after the famous mountain which dominates Como Lake, Resegone is the fiery little brother of Gorgonzola DOP. As all the blue cheeses they are brined in a salt and water solution and then left in the cellar for a period of time up to three months. In order to develop moulds the cheeses are pierced at the top, sides and bottom to allow the blue bacteria mould to evenly distribute.
It has a firmer texture than Gorgonzola, great to fill polenta or risotto or for an end of meal treat.
Ingredients: Milk, Salt, Rennet.
